Delicious Cauliflower Rice – Sandy K Nutrition

Cauliflower is all the rage. I still can’t get everyone in my family to love it like I do, but it doesn’t stop me from making it. Here’s the thing – not only is it super nutritious, but wow it cooks FAST (you can pre-rice the cauliflower or buy organic riced bagged like I do from Whole Foods to shorten prep). This is my favourite way to make riced cauliflower and here is what you need:
– 1 lb of organic diced cauliflower
– 4 tbsp of grassfed butter
– 1/2 cup of freshly chopped cilantro
– 2 cloves of minced garlic
– 1/2 medium sized diced onion
– Frank’s Hot Sauce or hot sauce of your choice to taste (depends on how hot you like it!!)
– 1 cup of organic cherry tomatoes washed and cut in half
– Salt & pepper to taste
Method:
Heat a large pan on medium heat, melt butter and sauté onion until opaque. Add in riced cauliflower and garlic and sauté for approx 12 mins. Add in your hot sauce to taste. At the end, add in your salt and pepper and freshly chopped cilantro. Easiest and nutritious side done in minutes!
